エクセルは新規ブック作成時、デフォルトはシートは3つ作成されています。
しかし、シートの数を変更したい場合は、[ツール] - [オプション]から、下図ウィンドウを表示します。

上図の赤で囲んだ「新しいブックのシート数」を1に変更すると、次回作成時からは、シートの数は1つに変更されます。
